  • 2 chicken breasts skinless and boneless
  • ½ teaspoon turmeric
  • ½ cup brown rice
  • 1 medium sweet potato
  • ½ cup sliced apple peeled, pips and core removed

Instructions

  • We cook the chicken, rice and sweet potato all at the same time.
  • Add the rice and turmeric to a medium saucepan and cover with water. Bring to the boil, place the lid on the pan and simmer for 20 minutes until cooked.
  • Drain and set aside.
  • In a large pot over medium-high heat, add the chicken breasts and cover with water. Bring to a boil, then cover and reduce heat to medium. Let simmer until chicken is cooked through, 10 minutes.

  • Peel and chop the sweet potato. Place in a medium saucepan, cover with water and bring to the boil. Cover and simmer for 10-15 minutes until cooked through.
  • Drain and with a fork or potato masher, mash the sweet potatoes.
  • Serve all the cooked ingredients together and top with the apple slices. Add a sprig of parsley if you have it to hand.
