Ingredients
 
 

  • 1 lb lean ground pork
  • 1 green apple
  • 1 ½ cups baby spinach
  • 1 tablespoon coconut oil
  • 1 tablespoon fresh parsley, chopped

Instructions
 

  • Preheat the oven to 200C/400F degrees and line a baking tray with parchment paper.
  • Heat the coconut oil in a pan on a medium heat and cook the baby spinach for 3-5 minutes until wilted.
  • Peel the apple and remove the seeds and core. Grate it.
  • In a medium mixing bowl, add the spinach to ground pork, grated apple and parsley.
  • Mix well with your hands (I wear gloves for this) and using a cookie scoop form into balls.
  • Place the meatballs onto the prepared baking tray and bake for 20-25 minutes until cooked through.
  • Cool before serving.

Air Frying

  • Prepare the meatballs and preheat the air fryer as per the manufacturers instructions.
  • Lightly spray the air fryer basked with cooking oil and place the meatballs in the air fryer basket, in a single layer.

Makes 14 medium sized meatballs.
