Preheat the air fryer for 5 mins at 200C/400F degrees.
Slice the salmon skin into pieces or strips with a sharp knife and toss in the coconut oil.
Lightly spray the air fryer basket with oil (you don't want the skin sticking).
Place the salmon pieces in a single layer in the air fryer basket and cook at 200C/400F degrees for 10 minutes, turning over half way through cooking.
Allow to cool before serving.
