Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or silicone baking mat.
  • In a large mixing bowl, mash the banana with a fork.
  • Add the egg and continue to mash.
  • Add the rolled oats to the bowl and mix well until all the ingredients are combined. If the mixture seems a bit dry, you can add a little water, about a tablespoon at a time, until you achieve a dough-like consistency. If your banana is large and very moist, you may not need the extra water.
  • Add the blueberries and mix into the oat mixture, bursting them with a fork.
  • Take small portions of the mixture and roll them into balls. Place the balls on the prepared baking sheet and then gently flatten them with your fingers or the back of a spoon. You can also use a lightly floured rolling pin to roll out the dough and cut it into desired shapes using cookie cutters.
  • Bake the treats in the preheated oven for about 15 minutes or until they turn golden brown and crispy. The baking time may vary depending on your oven and the thickness of the treats, so keep an eye on them to avoid overcooking
  • Once the treats are done, remove them from the oven and let them cool completely on a wire rack. They will become crunchier as they cool.
