In a large bowl, combine the grated carrot, blueberries, egg, and coconut oil. Mix well to ensure the egg and oil coat the ingredients evenly.
Gradually add the rice flour to the mixture. Stir until a dough forms. If the dough feels too dry, add a tablespoon of water at a time until it comes together.
Roll the dough out on a lightly floured surface to about 1/4-inch thick. Use cookie cutters or a knife to cut out shapes your dog will love.
Place the treats on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, or until the edges are golden and the treats are firm.
Let the treats cool completely before serving to your dog.
