Ingredients
 
 

  • 1 lb lean ground chicken
  • 1 large egg
  • 1/2 cup finely chopped green beans
  • 1/2 cup grated zucchini
  • 1/4 cup finely chopped red bell pepper
  • 2 tablespoons ground flaxseed
  • 1/4 cup chopped blueberries

Instructions
 

  • Preheat the oven to 180°C (350°F) and line a small loaf tin (8 x 4 inch (20 x 10 cm) ) with parchment paper.
  • In a large bowl, add the ground chicken, egg, chopped green beans, grated zucchini, chopped red pepper, ground flaxseed, and finely chopped blueberries.
  • Mix thoroughly using a spoon or your hands until everything is evenly incorporated.
  • Transfer to the loaf tin and press the mixture down firmly so it bakes evenly.
  • Bake for 40–45 minutes, or until the meatloaf is fully cooked through and the top feels firm.
  • Cool completely before slicing. Cooling helps the loaf firm up and makes it easier to cut into portions.
  • Serve in appropriate portions and store the rest in the fridge or freezer.

Cool completely, then store in an airtight container in the fridge for 4–5 days or freeze for up to 2–3 months. Thaw before serving.
