Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
In a large mixing bowl, add the finely grated carrot and egg into a bowl. Mix together.
Add the oat flour and mix into a dough.
Divide the dough into small, equal portions and roll each piece into a short log or small treat shape. We roll out the dough in parchment paper for an even roll and it's a less sticky process.
Take a thin strip of duck breast and gently wrap it around each dough piece, pressing lightly so it stays in place.
Place the wrapped treats onto the prepared baking tray, leaving a little space between each one.
Bake for 20–25 minutes, or until the duck is fully cooked and slightly crisp around the edges.
Remove from the oven and allow the treats to cool completely on a wire rack before serving.
Once cooled, store in an airtight container in the fridge or freeze for later use.
