  • Boil the sweet potatoes in water for 15–20 minutes until soft.
  • While the potatoes cook, steam or boil the carrot and green beans until tender.
  • Poach the fish fillets for 10 minutes OR place them in a baking dish and bake for 12–15 minutes at 180C/350F until fully cooked.
  • Drain the sweet potatoes and mash them with the Greek yogurt until smooth.
  • Flake the cooked fish into a bowl, check for bones and mix with the vegetables, chopped hard boiled eggs, nutritional yeast and parsley.
  • Spoon the fish mixture into 2 5-inch spring-form cake tins or a small baking dish.
  • Spread the mashed sweet potato over the top.
  • Bake for 15 minutes at 180C/350F until lightly golden on top.
  • Allow to cool before serving.
