Ingredients

Topping

  • 1 large sweet potato
  • 1/2 cup Cheddar cheese, grated

Filling

  • 1/2 lb lean ground lamb
  • 1/2 cup grated carrot
  • 1 cup finely chopped broccoli
  • 1 large egg
  • 2 tablespoons parsley, chopped

Instructions

Make the Topping

  • Peel and chop the sweet potato into small cubes. Boil or steam the sweet potato cubes until soft (about 10-15 minutes).
  • Mash the cooked sweet potato with a fork or potato masher until smooth. Add the Cheddar cheese and mix. Set aside.

Make the Filling

  • Add the coconut oil to a medium skillet and cook the ground lamb until fully browned. Break up the meat as it cooks to ensure it's evenly browned.
  • Stir in the grated carrot and finely chopped broccoli and cook for 3-5 minutes.
  • Remove from the heat and stir in the egg and parsley. Mix well.

Bake the Pies

  • Preheat your oven to 350°F (175°C) and line a muffin tin with silicone muffin liners (or greased paper muffin liners)
  • Spoon the lamb mixture into the muffin tin, pressing gently to pack it in.
  • Add the sweet potato mash on top.
  • Bake for 20 minutes, or until the tops are golden brown and firm to the touch.
  • Remove the mini pies from the oven, and allow to cool. Remove the silicone muffin liners and serve.
  • Serve one portion at a time, based on your dog’s size and dietary needs
