  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the pumpkin purée, peanut butter and egg and mix well.
  • Add the oat flour to the bowl and stir until a thick dough forms. If it's too sticky, add a little more oat flour; if too dry, add a teaspoon of water.
  • Use a cookie scoop to make even shaped balls and place them onto the prepared baking tray.
  • Bake for 15-18 minutes, or until the edges turn golden brown.

Notes

Makes 16 treats.
Instead of rolling the treat into balls, roll it flat and cut out shapes with a cookie cutter.
