Ingredients
 
 

  • 1 lb lean ground turkey
  • 1 cup cottage cheese
  • 1/2 cup pumpkin puree
  • 1/4 cup blueberries
  • 1 tablespoon ground flaxseed
  • 1 tablespoon chopped curly parsley
  • 1/2 teaspoon egg shell powder optional
  • 1 teaspoon salmon oil optional

Instructions
 

  • Heat a non-stick frying pan over medium heat.
  • Cook the ground turkey for 8–10 minutes, breaking it into small pieces until fully cooked.
  • Allow the turkey to cool for 10 minutes.
  • Stir in the pumpkin purée until evenly coated.
  • Fold through the cottage cheese.
  • Add the blueberries, flaxseed, ground eggshell and parsley. Stir to combine.
  • Drizzle with salmon oil before serving.
  • Serve at room temperature or slightly chilled.
