  • Preheat the air fryer for 5 minutes as per manufacturers instructions.
  • In a large mixing bowl, add the pumpkin puree, eggs and peanut butter. Mix until you have a smooth batter.
  • Add the rice flour and mix into a dough. If the mixture is too moist, add more flour. If it's too dry, add more pumpkin puree or water.
  • Roll the dough out in between two layers of parchment paper, about ¼ inch thick.
  • Use a cookie cutter to cut out shapes from the dough.
  • Place a square of parchment paper in the air fryer, then place the cookies on top in one layer. You will need to cook the cookies in batches.
  • Cook at 190C/370F degrees for 5 to 6 minutes until the cookies are firm.
  • Remove and allow to cool before giving as a treat.

Notes

Makes 30 medium treats.
The treats will be needed to cooked in batches.
