Air Fryer Instructions

  • Preheat your air fryer to 160°C (320°F).
  • Grate the zucchini and squeeze out as much moisture as possible using a clean tea towel or paper towels. Removing the excess liquid helps the frittatas cook evenly and prevents them becoming watery.
  • Flake the cooked salmon into small pieces, checking carefully for any bones.
  • Crack the eggs into a mixing bowl and whisk until fully combined.
  • Add the salmon, zucchini, parsley and any optional ingredients. Stir gently until evenly mixed.
  • Pour the mixture into silicone muffin molds. Fill each one around three-quarters full.
  • Place the silicone cups into the air fryer basket. Cook for 10–12 minutes, or until the centres are fully set and the tops are lightly golden.
  • Leave the frittatas in the silicone cups for around 10 minutes before removing. Allow them to cool completely before serving.

Oven Instructions

  • Preheat the oven 180°C (350°F). Make the muffin mixture as above and pour into silicone muffins molds.
  • Place the muffin molds onto a baking tray and bake for 18-22 minutes until until the centres are fully cooked.
  • Remove from the oven and cool in the molds, before removing.
