Bake the Cookies

  • Preheat your oven to 350°F (180°C) degrees and line a baking sheet with parchment paper.
  • In a large mixing bowl, mash the bananas until smooth.
  • Add the peanut butter and mix until smooth.
  • Add the rice flour mixing until a dough forms. If it's too sticky, add a little more rice flour.
  • Roll out the dough in between two layers of parchment paper to about ¼-inch thickness.
  • Use a football-shaped cookie cutter (or hand-shape them) and place them on the baking sheet.
  • Bake for 15-20 minutes, or until firm and lightly golden. Let them cool completely.

Add the Frosting

  • In a small bowl, mix ¼ cup peanut butter until smooth. Spread evenly over the cookies.
  • Use a piping bag or a spoon to decorate the cookies with the Greek yogurt —you can create football laces or other fun designs!
  • Let the frosting set for about 15 minutes, then serve.
