  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the pumpkin purée, coconut oil, rice flour and cinnamon until well combined.
  • If the dough is too dry, add more pumpkin puree. If the dough is too sticky, sprinkle a little extra rice flour.
  • Roll out the dough on a lightly floured surface to about ¼ inch thick. Use a heart shape cookie cutter to cut out shapes.
  • Cut the heart shape in half lengthways. Gently shape the head and pinch the tail to the side.
  • Use the tip of a small piping nozzle to cut out the eyes and the other end to cut out the mouths.
  • Place the cookies on the prepared baking sheet and bake for 20-25 minutes until the cookies are firm.
  • Allow the treats to cool completely before serving. Store in an airtight container for up to two weeks.

Notes

Makes 24 ghost cookies.
If you have a ghost cookie cutter, that can be used too.
