Ingredients
 
 

  • 1 1/2 lb ground lamb
  • 4 oz pumpkin puree
  • 2 oz carrot, finely grated
  • 2 oz oat flour
  • 2 oz ground flaxseed
  • 2 tablespoons parsley chopped
  • 1 large egg, beaten

Instructions
 

  • Preheat the oven to 180C/350F degrees and lightly grease and line a 2lb loaf tin with parchment paper. Or use a fun novelty dog bone tin as we did!
  • Place all the ingredients in a large mixing bowl and mix thoroughly to incorporate well.
  • Spoon the meatloaf mixture into the tin and spread evenly and firmly.
  • Bake for 30-40 minutes until the top of the meatloaf is firm.
  • Remove from the oven and allow to cool before slicing and serving
