Ingredients
 
 

  • 1 lb ground lean turkey
  • 1/2 cup green beans, chopped finely
  • 1 cup pumpkin puree plain
  • 1/2 cup kale, chopped
  • 1 tablespoon parsley, chopped
  • 1 cup cooked quinoa

Instructions
 

  • Heat the coconut oil in a large pan or skill on a medium heat and cook the ground turkey until browned and cooked through.
  • Add the green beans and kale and cook for a further 5 to 7 minutes.
  • Stir in the pumpkin puree and parsley and cook for 2 minutes.
  • Remove from the heat and stir in the cooked quinoa.
  • Allow to cool before serving.
