Make the Pastry

  • Preheat the oven to 350°F (175°C) and place 7 silicon muffin liners in a muffin pan.
  • In a medium mixing bowl, mix 1 cup of oat flour and ½ cup of coconut flour.
  • Stir in ¼ cup of applesauce, 1 egg, and 2 tablespoons of oil. Mix until a dough forms. If the dough is too dry, add a small amount of water, 1 teaspoon at a time, until it comes together.
  • Cut the dough into 7 pieces and press the dough into the silicon muffin cases.

Make the Filling

  • Peel, core, and chop the 2 apples into small pieces.
  • In a small saucepan, combine the chopped apples, 2 tablespoons of water, 1 tablespoon of applesauce, and ½ teaspoon of cinnamon. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the apples are soft but not mushy.
  • Let the filling cool slightly before spooning it into the prepared pie crusts.

Assembly

  • Spoon the apple mixture into the crust, spreading it evenly.
  • If you reserved some dough, cut it into strips and arrange them in a lattice pattern over the filling, or place a smaller rolled-out piece of dough on top.

Bake

  • Place the pies in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown.
  • Let the apple pies cool to room temperature before giving it to your dog.
