Make the Cakes

  • Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners or lightly grease with coconut oil.
  • In a large mixing bowl, combine the sweet potato puree, applesauce eggs, and melted coconut oil. Stir well.
  • Add flour and mix until just combined. Don’t overmix.
  • Spoon the cake mixture into the muffin tin cases.
  • Bake for 20–25 minutes, until a toothpick comes out clean. Let cool completely before decorating.

Make the Frosting

  • In a small bowl, whisk together the mashed sweet potato, Greek yogurt, and coconut oil until smooth and creamy.
  • Spoon into a piping bag with a star nozzle.
  • Pipe onto cooled cupcakes in swirls.
  • Decoration optional! Serve to wagging tails.
