Dog Sweet Potato Cake

Ingredients
Cakes
- 1 cup sweet potato puree
- 1 cup oat flour
- 1/2 cup apple sauce
- 2 large eggs
- 2 tablespoons coconut oil, melted
Frosting
- 1/2 cup sweet potato puree
- 3 tablespoons Greek yogurt
- 1 teaspoon coconut oil, melted
Instructions
Make the Cakes
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners or lightly grease with coconut oil.
- In a large mixing bowl, combine the sweet potato puree, applesauce eggs, and melted coconut oil. Stir well.
- Add flour and mix until just combined. Don’t overmix.
- Spoon the cake mixture into the muffin tin cases.
- Bake for 20–25 minutes, until a toothpick comes out clean. Let cool completely before decorating.
Make the Frosting
- In a small bowl, whisk together the mashed sweet potato, Greek yogurt, and coconut oil until smooth and creamy.
- Spoon into a piping bag with a star nozzle.
- Pipe onto cooled cupcakes in swirls.
- Decoration optional! Serve to wagging tails.

Store frosted cupcakes in the fridge for up to 3 days.
Unfrosted cupcakes can be frozen for 2 months.
