  • Add the strawberries and cold bone broth to a blender. Blend until smooth.
  • Pour the cool strawberry mixture into a small saucepan. Sprinkle the gelatin evenly over the surface rather than tipping it into one heap.
  • Leave for 5–10 minutes to hydrate, following any specific directions on your gelatin packaging. Blooming the gelatin before heating helps prevent dry clumps.
  • Place the saucepan over low heat. Whisk gently as the mixture warms, until the gelatin has completely dissolved.
  • Remove the saucepan from the heat and allow the mixture to cool until lukewarm but still fluid. Whisk in the kefir until evenly combined. Don’t leave the mixture to cool so long that it begins to set.
  • Pour or spoon the mixture into the silicone moulds. A small jug with a pouring spout makes this easier.
  • Refrigerate for 2–3 hours, or until completely set. Larger or deeper moulds may need longer.
  • Gently push the gummies out of the moulds and transfer them to an airtight container. Keep refrigerated until serving.
