Rabbit Cookie Cutter Trick

If like me, you don’t have bunny cookie cutters to hand you can fashion a bunny shape with a heart and a circle shape. Below is my attempt at it!

Coconut Flour Dog Easter Cookies

We made a batch of these cookies with coconut flour and shaped them into eggs. The ingredients are the same as the batch with the oat flour (with the flour swap) but we found they took longer to cook.

Roll all ingredients into a dough. The dough was a brighter color due to less flour being used.

If your dough feels too sticky to roll or shape, pop it in the fridge for 15โ€“20 minutes. This makes it easier to handle and helps the cookies hold their shape better when baking.

Make dog friendly cookie icing with Greek yogurt. Add color using crushed raspberries for pink, turmeric for yellow and blue spirulina for blue. TIP – The cookies will soften when stored when iced.

Storage

  • Preheat the oven to 180C/350F degrees and line a baking sheet with parchment paper.
  • In a large mixing bowl, add the grated carrots, apple and flour and mix well.
  • Add the egg and coconut oil and work into a dough. Add more flour if the dough is too sticky or a dash of water if the dough is too dry.
  • Roll the dough out in between two layers of parchment paper about 1/4 inch thick.
  • Cut out shapes with cookie cutters and place them on the prepared baking sheet.
  • Bake for 20-25 minutes until firm and golden.
  • Cool, ice and decorated with Greek yogurt (optional) and serve as a treat.

Notes

Makes 18 cookies.
For Coconut Flour Cookies –ย substitute the oat flour with 1/3 cup of coconut flour. This dough will make 12 cookies.
Decoration –ย Any dog friendly “icing” such as Greek yogurt can be used to cover the cookies. Use natural coloring. This will make the cookies softer when stored.
